Opened late last year, Sen of Japan at Marina Bay Sands is Nobu alum, Chef Nakano Hiromi’s first outpost in Singapore. The casual, modern restaurant serves American-Japanese cuisine, a specialty of Chef Hiromi, who spent about eight years helming Nobu in Las Vegas.

Those sceptical of fusion cuisine will be pleased to know that there are no gimmicks here. The techniques are precise – such as introducing the crunch of fried capers to a salmon sashimi starter, or using lemon juice to elevate a seafood don.
