Slow-cooked for three hours before finishing in Lollapalooza’s wood-fired oven, the large Mediterranean octopus is unbelievably tender on the inside, and perfectly charred and crispy on the outside. It’s fresh so it’s great on its own, but has a whole other dimension when paired with the accompanying spicy cherry tomato salsa.

But of course, the most important part of every roast pork belly is the skin, and this one definitely passes the test. Crazily crisp, you can easy break it apart with a hit of a spoon.
